Chef Charles Hess, aka The Gumbo Guy, knows a thing or two about good cooking. He's been perfecting his gumbo recipe for the last 8 years, developing ridiculously good Cajun and Creole dishes from scratch using homemade traditions- just the way they do down in N'Orleans. He believes St. Louis deserves good gumbo, and he has launched his new food truck, STL French Quarter, to bring his delicious creations to the people of St. Louis.
Chef Charles is no stranger to the STL food scene. He honed his culinary skills at St. Louis Country Club under Chef Paul Kampf, where he battled in ACF competitions. Chef Charles was also the Sous Chef for such famed STL area establishments as the Hilton, 360, the Cheshire Inn, 801 Chophouse, and 801 Fish- where he was the Executive Sous Chef.
Chef Charles is thrilled to be out on his own now, bringing his food truck to a location near you! He likes to let his food speak for itself, and we think you'll agree... this is ridiculously good gumbo.
